Champagne Ployez - Jaquemart Extra-Brut Passion

The special feature of Extra-Brut Passion comes from the vinification. To give more complexity and structure, 25% of wines matured in oak barrels are included in the blend, these wines do not undergo malolactic fermentation. The remaining 75% are wines from the annual harvest.

In order to limit contact with yeasts during maturation, the wine is aged «sur pointe» in the traditional cellars of the house. This traditional maturation process limits contact with yeast during the maturation process and allows the wine to retain its freshness.
