The grapes come from old, low-yielding vines that are picked exclusively by hand. The blending takes place directly at the harvest for a better harmony of the flavors. This method emphasizes the work on maturity and gives a unique character to each vintage.
This wine is vinified in a traditional way with the aim of limiting handling and blending. The sulphites content is very low and it has undergone only one filtration. It benefits from short maceration (7 days) and moderate extraction, at a constant temperature of around 20°C.
The wine is then bottled in barrels on the estate after 8 months.

Terroir
The vineyard is located on the heights of Gignac and extends over just over 7 ha. The soil is clay-limestone and shallow, it is also most covered with pebbles at the top of the hills. Influenced by the Mediterranean climate, hot and dry, the vines naturally have a lower yield.
There is a lot of attention for high quality in which the vines enjoy generous sunshine and cool nights. The grapes are picked at optimum ripeness.
Tasting notes:
The color is deep, persistent and reveals ruby tones. The nose is complex, warm, aromas of many wild fruits (blackcurrants, redcurrants, etc.).
In the mouth a characterful, lively wine with aromas of black fruits (black cherry, plum, etc.) accompanied by mocha and cocoa notes in the aftertaste.
Dry, tight and spicy tannins, present yet discreet, offer a pleasant experience.
Smooth and balanced wine with a aging potential of 3 to 6 years, should be enjoyed at room temperature and well ventilated.
