Champagne Ployez- Jacquemart Extra-Brut Passion

What makes Extra-Brut Passion unique stems from its winemaking process. To add complexity and structure, 25% of the blend consists of wines aged in oak barrels; these wines do not undergo malolactic fermentation. The remaining 75% are wines from the annual harvest.

To limit contact with yeast during aging, the wine ages “sur pointe” in the house’s traditional cellars. This traditional aging process minimizes contact with yeast and ensures that the wine retains its freshness.
