The Champagne of Ployez-Jacquemart

Ployez-Jacquemart is a family house founded in 1930 by Marcel Ployez and his wife Yvonne Jacquemart. The whole essence of Ployez-Jacquemart lies in the constant search for excellence, the understanding of the Champagne terroir and their ability to make the highest quality wines.

The skills to live this essence have been passed down through three generations. This is the cornerstone of their approach to champagne production. The family estate primarily farms their own Pinot Noir and Pinot Meunier vineyards in the Premier and Grands Crus villages of Ludes and Mailly Champagne, Villedommange and Vertus.

Great care is taken in the manual cultivation of these vines; with the aim of guaranteeing the overall quality of the final harvest. Strict rules are followed each year to ensure the very best is extracted from each harvest. Ployez-Jacquemart uses a blend of grapes from their own Grands Crus vineyards and from a handful of carefully selected wine growers, with whom they have worked together for 30 years.

All grapes are hand-picked and sorted by variety, cru and specific vineyard – this forms the basis for estate pressing.

Only the best quality of the first pressing

No expense is spared; only the best juice from the first pressing is considered of sufficient quality for use. Laurence Ployez's meticulous attention to detail is evident at every stage of the process. Grape must is left to settle not once but twice before fermentation.

The wine is regularly moved from one barrel to another to ensure a high oxygen content; the wines are vinified - matured - in wooden barrels or foudres. In this way, old traditions are used as a basis to produce high-quality sparkling wines. The estate and the cellars underline the story and one can feel the magic growing as one goes deeper underground, down the stairs towards the storage.

The creation of the bubbles

In the winemaking process, the use of traditional yeasts, combined with a very slow fermentation in the bottle in the 25-metre deep cellars (10°clesius), ensures extremely fine bubbles. With the exception of L.d'Harbonville, none of the blends are set in stone, each year is a new challenge to extract the very best from each harvest.

Ployez-Jacquemart has a clear focus

At Ployez-Jacquemart, they believe that Champagne is no different from other long-established wine regions such as Bordeaux or Burgundy and they have a very strict policy of “quality, not quantity”.

Their mission is to leave the structure of each wine intact, allowing the true character and personality of the vintage to shine through. When it is time for disgorgement, after a maximum of 12 years in their cellars, only a very minimal “dosage” is added, usually 3-4 g/liter.

This method helps to produce aromatic fruity wines with a very pure palate and a long finish, while paying close attention to the fine balance between alcohol/acidity and complexity/freshness.
